(More customer reviews)I wish I'd known about these earlier in my cooking career; just place the terracotta disk inside the plastic pouch in the box, or in the counter top canister where you store your brown sugar, and seal from air as usual. The sugar stays loose and fresh much longer than if left on its own. I usually bury it mid-way into the sugar.
The disk is larger than a dollar coin and easy to clean between uses - just make sure it dries completely before exposing it to your sugar. Happy eating.
